Delicious Homemade Gluten Free Pizza Recipe

I don’t know about you, but pizza is probably my favorite food.   Unfortunately it is difficult to find a gluten free pizza out in public, so in order to get pizza, you have to learn how to make one at home.

Here is a family favorite recipe for gluten free pizza that I wrote down a couple of years ago.  I can’t for the life of me remember where I got it from, so I am unable to credit the source.   If you know where it came from, please drop a comment and I’ll update the post!

Gluten Free Homemade Pizza Recipe

Ingredients:

  • 3/4 c tapioca flour
  • 1/2 c white rice flour
  • 2/3 c sorghum flour
  • 1 t xanthan gum
  • 1 t fine sea salt
  • 1/2 c milk
  • 2 1/4 t yeast
  • 2 t sugar
  • 2 large egg whites, lightly beaten
  • 3 T plus 1 t extra-virgin olive oil

Directions:

  1. Whisk flours, salt, and xanthan gum together in the bowl of an electric mixer.
  2. Microwave the milk for 30 seconds to 1 minute (depending on microwave) so that it is between 105 and 110 degrees.
  3. Add the sugar and yeast, set aside for a few minutes until it starts to froth. Meanwhile, beat the egg whites gently and add the olive oil.
  4. Once proofed, add all the liquid to the dry ingredients and mix to combine, scraping the bowl. Beat on high for about 5 minutes.
  5. Scrape half of the dough onto a large piece of parchment paper.
  6. Rub with olive oil and, with greased hands, spread out dough gently to form a pizza of desired thickness, leaving it thicker around the edges for a crust.  Repeat with remaining dough.
  7. Set in a warm place and allow to rise for about 20 minutes.
  8. Heat oven to 400, with a pizza stone or a cookie sheet in the middle of the oven.
  9. Once the oven is hot, quickly put one dough circle into the oven and bake for 5 to 10 minutes. Cook other crust in the same way.
  10. Add whatever toppings you want, and eat!

Gluten Free Pizza Crust Recipe

I’ve noticed a few “crustless” pizzas lately that are labeled as gluten free (use a parmesan crust), but for you traditionalists, here is a good pizza crust recipe that is also labeled as gluten free!

Gluten Free Pizza Crust Recipe

Ingredients:

  • 1 tablespoon active dry yeast
  • 2/3 cup brown rice flour
  • 1/2 cup tapioca flour
  • 2 teaspoons xanthan gum
  • 1 teaspoon gelatin powder
  • 1 tablespoon pizza seasoning (mix of dried basil, oregano, majoram, pepper & garlic powder)
  • 1/2 teaspoon salt
  • 3/4 cup warm milk (110 degrees F, microwave about 45 secs)
  • 1 teaspoon olive oil
  • 1 teaspoon honey
  • 1 teaspoon cider vinegar
  • Cornstarch (for rolling crust)

Directions:

  1. Preheat oven to 425 degrees.
  2. Grease a large non-stick pizza pan or heavy non-stick baking sheet (air-bake & perforated pans are not recommended).
  3. In a mixer, blend yeast, flours, xanthan gum, gelatin powder, italian seasoning and salt on low until blended.
  4. Add milk, oil, honey, and vinegar. Beat on high for 2 minutes (Dough will be very soft).
  5. Using a spatula, put dough on prepared pizza pan.
  6. Sprinkle with cornstarch and roll out to desired thickness, continuing to sprinkle with cornstarch as needed. Make edges thicker to hold toppings that will be added later.
  7. Bake crust for 10 minutes.
  8. Remove from oven and top with sauce and desired toppings.
  9. Bake another 20-25 minutes.
