Easy Baby Back Ribs

Now that fall is here and hockey season is starting up, I am pulling my crock pot out.  My family is picky when it comes to soup, has banned pot roast and chicken from the crock pot, so I am grasping at straws with meal ideas.   We love ribs, but the method I had previously used for making them is time consuming.  I set out to find a way to make them in the crock pot.

I based my “recipe” on this one from AmazingRibs.Com, but changed up a few things.

Easy Baby Back Ribs

  • 2 racks of baby back ribs
  • 1 bottle of Sweet Baby Ray’s Honey BBQ sauce
  • 1 large Honey Crisp apple
  • 2 large baking potatoes
  • 4 large carrots

1.  Clean apple & veggies.  Chop apple and baking potatoes.  Peel carrots & chop into large chunks.  Place apple & veggies at the bottom of the crock pot.

2.  Cut ribs into 2-4 rib portions.  Layer over the veggies and add a layer of sauce.  Spread with a spoon.

3.  Repeat until finished.

4.  Cook on low for 8 hours.

A plate full of ribs!

Serve with an ice cold salad, gluten-free cornbread & enjoy!

This method was simple & tasted just as good, if not better than the traditional way that I have been making ribs for years.  If you miss that browned or grilled look on the outside, simply brown the meat on both sides before placing in the crock pot.  I think the true success was measured by the family reaction – they all ate it and no one complained!  That is a score in my book!
