Gluten Free Birthday Cupcakes Recipe

Gluten Free Birthday Cupcake Recipe

Cupcake Ingredients:

  • 2 cups brown rice flour
  • 2/3 cup sweet rice flour
  • 1/2 cup corn starch
  • 1 1/2 tsp xanthan gum
  • 2 tsp baking powder
  • 2 tsp Egg Replacer
  • 1 tsp salt
  • 1 cup butter
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 1/2 tsp vanilla
  • 1 2/3 cup citrus-flavored carbonated beverage

Cupcake Directions:

  1. Preheat oven to 350 degrees Farhenheit. Line muffin tin with paper muffin papers.
  2. In a medium bowl, whisk together the flour mix, tapioca flour, xanthan gum, baking powder, Egg Replacer, and salt.
  3. In the bowl of your mixer, beat the butter and sugar until fluffy. Beat in the eggs, one at a time, before adding the vanilla. Alternately stir in the dry ingredients and carbonated beverage until just blended. Pour the batter into the tins and bake until golden brown.
  4. I frosted with Pillsbury Vanilla Frosting and sprinkled with mini M&M’s.
  5. These turned out really great. I took them to Davy’s school for his class when they sang Happy Birthday to him. The teacher was tickled. Mike enjoyed them a lot too. It made me feel very normal to be able to take cupcakes to his class like any normal mom would do and have them taste like the normal cupcakes anyone else would bring.
