It was just about a year ago that I first heard that Jennifer Esposito was in the process of opening a gluten-free bakery in Manhattan, among other things, including introducing a gluten-free all-purpose flour. I am thrilled to tell you that the Jennifer’s Way gluten-free flour and pancake mix are now available!

The all-purpose flour already contains xanthan gum and can be used cup-for-cup in your recipes that you once thought were no longer possible to make! The pancake mix can be made vegan, into waffles, crepes, with added fruit, pumpkin or chocolate chips. The products can be purchased at GFreeNYC or on the Jennifer’s Way website.
Jennifer not only has to follow the gluten-free diet, but she also has to avoid dairy, soy, corn and refined sugar. She recently learned that she was reacting to a number of other foods due to leaky gut syndrome and is currently using a rotation diet to avoid developing new sensitivities.
