We are big fans of King Arthur Gluten-Free mixes in our house. Jon prefers the pancake mix over just about any other mix out there, so when I was grocery shopping last week, I set out to pick some up. There was no King Arthur Gluten-Free Pancake Mix in stock, but there was a box of King Arthur Gluten-Free All-Purpose Baking Mix.

The label has all sorts of recipes included on it. Making pancakes with this mix is a quick process. Simply add sugar, egg, butter/oil, milk and vanilla.
