LaFactory Provides Perfect Gluten-free Tortilla!

Ivoryteff_smWhile browsing the gluten-free offerings at Fresh Market recently, I found some small corn tortillas that I’d not seen before. When I looked closer I saw the label stated the item was made with both corn and wheat. Then I noticed the large tortillas on the shelf marked wheat and gluten-free. Into my cart LaTortilla Factory Ivory Teff Tortillas went lickity split!

The 10” tortillas made perfect large enchiladas – the best I’ve had made with a gluten-free product to date. The pack of six large tortillas was less than $5 and Fresh Market is not known to have low prices. I hope I find these great tortillas somewhere else since Fresh Market is very out of the way for us.

Last night my husband made chicken quesadillas and they were out of this world delicious! With the enchiladas, you tasted more of the sauce so it was hard to judge the tortillas by themselves. Though I never made quesadillas when I ate gluten, the ones we had last night were as good as, or better than gluten versions I’ve had in  restaurants!

The LaFactory product is made with tapioca starch, ivory teff flour and millet flour. There is no rice flour in the product and the tortillas offer a phenomenal taste and texture. These are my new favorite and due to them being a much better value than the French Meadow Bakery product, they will be a staple in our freezer from now on. I just hope I don’t have to go to Fresh Market to find them.

We put a little oil on the griddle and softened the defrosted the tortillas before adding cooked chicken and cheese and folding to melt the cheese. The lightly crisped quesadillas were not tough at all and had a perfect texture one would expect from a wheat tortilla. These things are really good in every way – what a find! Oddly, they were on the shelf at Fresh Market instead of in the freezer, which might be why I’ve not found them elsewhere. I assumed any such item would always be in the freezer case.

When I hear back from the company regarding where else we might find their products in the Atlanta area, I’ll update this post. LaTortilla is listed in Shelley Case’s book, Gluten Free Diet: A Comprehensive Resource Guide, which is the only reason the name was familiar when I saw it in the store.
