Everyone has their favorite gluten-free brownie mix, and this is mine. I just baked a pan of delicious Gluten-Free Pantry Chocolate Truffle Brownies and I am staring at them as if they will cool faster by sheer will. While I wait, I will tell you why these are my favorite brownies, and invite you to share your favorites too.
One thing I really appreciate is a simple ingredient list, especially the ingredients that I have to add to make the recipe complete. As many of my readers know I am not a big fan of the kitchen. I like easy recipes and simple dishes. The ingredient list on the box reads: Sugar, Chocolate Chips (Sugar, Chocolate Liquor, Cocoa Butter, Soy Lecithin, Vanillin), Cocoa Powder, White Rice Flour, Potato Starch, Corn Starch, Xanthan Gum, Salt. The first ingredient is sugar, which is a red flag, but these are a treat and not a regular dish, so I let it slide. I appreciate that the ingredient list is easy to read, leaving out the crazy chemicals that seem to be spelled without vowels. To finish the ingredient list you simply need eggs and butter (which can be substituted if you prefer), two simple items that are usually on hand.
I think the brownies are almost ready to slice, which brings me to my next point. These brownies bake for 25 minutes at 350, a nice time frame for throwing them in after dinner, or while taking a hot shower and putting on some warm jammies. Some mixes take longer, and I’ve seen a few that bake faster, but this seems like just the right amount of time to me. The house is filled with the warm and inviting smell of delicious brownies and before you know it, they are ready to eat!
As I take my first bite I am enticed by the slight crunch of the edge of the brownie, one of my favorite things in the whole world. The top of the brownie is also slightly crunchy, with a smooth, warm pocket of chocolate just below the surface. One of the great things about the Gluten-Free Pantry Chocolate Truffle Brownie Mix is the chocolate chips that melt in to little hidden pockets of chocolate that run and pour over the baked brownie pieces. They add a little surprise to every bite and make this my favorite brownie mix of all time.
I like to bake this mix in a square glass baking dish. I like the brownies to be fairly shallow so the crunch and chocolate chips are evenly spaced throughout the baking dish. No matter how you chose to make them, the rich chocolate flavor and special little chocolate chips make this a fantastic mix that never fails to impress even the most gluten-eating of friends and family.

This was the first brand of gluten-free brownies that I tried and I can admit they are the closest to regular brownies! They are absolutely delicious…I just have a hard time finding the grocery store that carries them.
