I was the very lucky recipient of a box of a variety of cookies from Schar last week. I should really have a “C” on my sweater, because I sure like cookies and have been called “The Cookie Monster” a time or two. While I have seen many varieties of Schar cookies in the stores before, I had never actually sampled them.
Schar has been around for a long time – they began making gluten-free food more than 25 years ago. Whatever they are doing, they seem to be doing something right! I received 4 different boxes of cookies to sample:

Shortbread Cookies – The new, golden-brown breakfast biscuit. Made with the finest shortbread, honey and egg, with no milk. Just like grandma used to make them! Fitness for all day long!
Which cookies do you think I dug into first? If you guessed the Chocolate O’s, you are correct! This girl loves her Oreo-like sandwich cookies. I was very impressed with the taste & texture of these cookies. They were a bit smaller than the traditional Oreo, but I thought the taste was better! The next cookies I sampled were the Chocolate & Vanilla Sandwich Cookies. These were both good cookies, but not as good as the Chocolate O’s. The Shortbread Cookies were the last cookies that I sampled. I was brought back to my pre-gluten-free days when I opened the package. The buttery smell drifted out of the bag and I couldn’t wait to sink my teeth into the cookies. The flavor of the cookies were very much what I remember a shortbread cookie tasting like, but they seemed a little on the dry side. Perhaps I should have been dipping these in milk? I think these could make a great base for a crumb crust or even individual mini-cheesecakes made in a cupcake pan. Click here for more recipe ideas from Schar.
