Recipe: Dark Chocolate Truffles

When my mom & step dad visited this past weekend for Hannah’s birthday, they brought along some amazing little balls of heaven –  dark chocolate truffles.  They had me at dark chocolate – there was no need to further explain ingredients, etc, just hand over the goods.

The truffles were about the size of a cookie that you would form & roll into a ball before baking.  They had been rolled in walnuts for a decorative coating.  I bit into my treat & began my trip to heaven.  The dark chocolate flavor resonated throughout the truffle and lingered in my mouth.  I only have one negative thing to say – they need to be bigger so they last longer than 2 bites.

My step dad, Joe, was nice enough to share the recipe with me so that I could share it with you all.

Anna’s Dark Chocolate Truffles

1 cup of date paste or 1 cup of pitted dates + 2 TBSP water

1 1/4 cup almond butter

1 1/4 cup cocoa powder

1/3 cup honey

Directions

Mix all above ingredients in a food processor and form into walnut size balls.  Roll in crushed walnuts, coconut or cocoa powder. Chill.  Makes between 38-44 balls ranging from 80 – 95 calories/piece (more truffles = less calories per piece).  Each truffle has between 8-10 grams of protein.

Pair these truffles with a glass of red wine for dessert or they would be great as a pre-workout or post-workout snack.  Nothing like a ‘healthy’ dessert treat that is naturally gluten-free!
