Recipe: Delicious Bruschetta

Welcome to July! Can you believe 2015 is half over already? I really don’t know where the time goes. It sure hasn’t been feeling much like summer here in Ohio. In fact the weather has been much more like spring with all of the rain and fall with the cooler temperatures. Hopefully July brings some more summer-like weather along with it!

Since the Fourth of July is just days away, I wanted to share another recipe with you guys. This recipe is simple to prepare and perfect for entertaining.

Delicious Bruschetta

  • 1 box Glutino Bagel Chips
  • 3 ripe tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh basil
  • 2.5 teaspoons olive oil


Line a baking sheet with aluminum foil. Preheat broiler to high. Arrange the bagel chips in a single layer on the baking sheet. Chop the tomatoes and basil and mince the garlic. In a mixing bowl, combine the tomatoes, olive oil, garlic and basil. Spoon the tomato mixture onto the bagel chips. Place in the oven for 7-10 minutes. Serve warm.

As I was reading through the recipe for the Bruschetta, I was thinking of all of the other ways I could use the plain Glutino Bagel Chips. A few that come to mind:

  • Top with tuna salad (tuna + mashed avocado + sea salt) and serve cold
  • Top with tuna salad (traditional with mayo) and cheese, broil and serve warm
  • Top with marinara, mozzarella and fresh basil. 

If dessert is more your thing, top the Cinnamon and Sugar Bagel Chips with cream cheese and a thinly sliced strawberry for a sweet treat. 

However you choose to celebrate, remember gluten-free doesn’t have to mean taste-free. Enjoy the foods you can have!
