Gluten Free Chocolate Chip Cookies Recipe

Hmmm, what Celiac needs more gluten free desserts?  In all seriousness though, here is what looks to be a great gluten free recipe for chocolate chip cookies provided to us by Millionaire Mama, and finding tasty cookies is always a good thing!

Gluten Free Chocolate Chip Cookies Recipe

Ingredients:

  • Gluten Free Flour Mix (1 C Rice Flour, 1 C Sorghum Flour, 2/3 C Potato Starch, 1/3 C Tapioca Starch, 1 ts Xantham Gum)
  • 1 ts Baking Powder
  • 1 ts Baking Soda
  • 1/2 ts salt
  • 1/4 ts xantham gum
  • 3/4 C Vegan Buttery Spread
  • 3/4 C Brown Sugar (I used a heaping cup)
  • 1/2 C Sugar (again a heaping cup)
  • 2 eggs
  • 2 ts vanilla
  • 1 package carob or Sunspire milk chocolate pieces

Directions:

  1. Mix all your dry ingredients in a large bowl.
  2. Mix your eggs, brown sugar and sugar together until creamy, add other wet ingredients in the mixer and gradually add the flour, scraping the sides as needed.
  3. Mix on low until moist, smooth and creamy.
  4. Add in your chocolate chips, then spoon mixture onto your pans.
  5. Bake at 375 for 10-12 minutes.
  6. Let the cookies cool for about a minute and then take them off the pan. (If they seem dry, cookies will moisten after a few hours).
