Hmmm, what Celiac needs more gluten free desserts? In all seriousness though, here is what looks to be a great gluten free recipe for chocolate chip cookies provided to us by Millionaire Mama, and finding tasty cookies is always a good thing!
Gluten Free Chocolate Chip Cookies Recipe
Ingredients:
- Gluten Free Flour Mix (1 C Rice Flour, 1 C Sorghum Flour, 2/3 C Potato Starch, 1/3 C Tapioca Starch, 1 ts Xantham Gum)
- 1 ts Baking Powder
- 1 ts Baking Soda
- 1/2 ts salt
- 1/4 ts xantham gum
- 3/4 C Vegan Buttery Spread
- 3/4 C Brown Sugar (I used a heaping cup)
- 1/2 C Sugar (again a heaping cup)
- 2 eggs
- 2 ts vanilla
- 1 package carob or Sunspire milk chocolate pieces
Directions:
- Mix all your dry ingredients in a large bowl.
- Mix your eggs, brown sugar and sugar together until creamy, add other wet ingredients in the mixer and gradually add the flour, scraping the sides as needed.
- Mix on low until moist, smooth and creamy.
- Add in your chocolate chips, then spoon mixture onto your pans.
- Bake at 375 for 10-12 minutes.
- Let the cookies cool for about a minute and then take them off the pan. (If they seem dry, cookies will moisten after a few hours).
