Gluten Free Chocolate Citrus Cupcakes Recipe

Who doesn’t like a good cupcake every now and then?  Finding cupcakes may be easy, but it is rare that we run across a good gluten free cupcake recipe.    I recently ran across this one and figured I would share it with our readers.

Gluten Free Chocolate Citrus Cupcake Recipe

Ingredients:

  • 1 1/2 cups gluten-free flour mix
  • 1/2 cup sugar
  • 1/4 cup baking cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup orange juice
  • 1/3 cup water
  • 3 tbsp canola oil
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1/3 cup mini semisweet chocolate chips (I use Enjoy Life Foods brand)
  • 1 1/2 tsp icing sugar

Directions:

  1. In a bowl, combine flour, sugar, cocoa, baking soda and salt.
  2. Combine the OJ, water, oil, vinegar and vanilla.
  3. Stir into the dry ingredients just until moistened.
  4. Fold in chocolate chips.
  5. Coat muffin tins with nonstick cooking spray; fill half full with batter.
  6. Bake at 375 degrees for 13-16 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before removing from the pan to wire rack to cool completely.
  8. Just before serving, sprinkle with icing sugar.
