Who doesn’t like a good cupcake every now and then? Finding cupcakes may be easy, but it is rare that we run across a good gluten free cupcake recipe. I recently ran across this one and figured I would share it with our readers.
Gluten Free Chocolate Citrus Cupcake Recipe
Ingredients:
- 1 1/2 cups gluten-free flour mix
- 1/2 cup sugar
- 1/4 cup baking cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup orange juice
- 1/3 cup water
- 3 tbsp canola oil
- 1 tbsp white vinegar
- 1 tsp vanilla extract
- 1/3 cup mini semisweet chocolate chips (I use Enjoy Life Foods brand)
- 1 1/2 tsp icing sugar
Directions:
- In a bowl, combine flour, sugar, cocoa, baking soda and salt.
- Combine the OJ, water, oil, vinegar and vanilla.
- Stir into the dry ingredients just until moistened.
- Fold in chocolate chips.
- Coat muffin tins with nonstick cooking spray; fill half full with batter.
- Bake at 375 degrees for 13-16 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from the pan to wire rack to cool completely.
- Just before serving, sprinkle with icing sugar.
