It wouldn’t be Thanksgiving without stuffing, but this recipe is so easy, you’ll have stuffing much more often. Using gluten free cornbread makes this a stuffing those living with Celiac Disease can eat, but everyone will enjoy. Hint, you will need to make two batches of cornbread to make sure you have enough for the stuffing.
Gluten Free Cornbread Stuffing Recipe
Ingredients:
- 1 tablespoon olive oil
- 1 cup celery, diced
- 1 cup onion, diced
- 1 tablespoon garlic, chopped
- 4 cups Gluten Free Cornbread, diced
- 2 tablespoons fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- sea salt, to taste
- pepper, to taste
- 1 cup gluten free chicken broth
Directions:
- Preheat oven to 375°F.
- On the stove, preheat a sauté pan over medium heat with a thin layer olive oil.
- Add the celery, onion and garlic to pan and cook.
- After the vegetables begin to turn translucent, add the fresh sage and thyme and cook an additional minute.
- Adjust seasoning with salt and pepper.
- Add the cup of chicken broth and bring to a boil.
- Place the cubed cornbread in a bowl.
- After the vegetable mixture has come to boil, pour over the cornbread.
- Mix everything together until well combined.
- Adjust seasonings if needed.
- Place the mixture in an oven-proof casserole dish and bake for approximately 25 to 30 minutes.
- If desired, place under the broiler for a few minutes to brown the top.
