Gluten Free Lemon Pudding Cake Recipe

Here is a terrific gluten free recipe for lemon pudding cake.

Gluten Free Lemon Pudding Cake Recipe

Ingredients:

  • 3/4 cup granulated sugar
  • 2 tbsp potato flour
  • 1 1/4 tsp grated lemon rind
  • 1/4 cup lemon juice
  • 2 tbsp vegetable oil
  • 2 eggs, separated
  • 1 cup milk

Directions:

  1. Combine sugar, flour and salt.
  2. Stir in lemon rind, lemon juice and vegetable oil.
  3. In a separate bowl, lightly beat egg yolks, add milk.
  4. Add to lemon mixture and mix well.
  5. Beat egg whites until stiff peaks form.
  6. Fold into lemon mixture.
  7. Pour into 1 quart baking dish.
  8. Place baking dish into a larger pan containing one inch hot water.
  9. Bake 350 degrees for about 45 minutes or until cake is tender. (Two layers form, cake and pudding)
  10. Serve warm or cooled. Makes 4-6 servings.
