Gluten Free Zucchini Muffins Recipe

Zucchini is one of those vegetable you can find all the time whether it’s at the grocer store, the farmer’s market or your own backyard.  Gluten Free Zucchini Muffins are a great way to have a tasty treat and get some veggies as well.  You won’t have to feel guilty about eating these muffins.

Gluten Free Zucchini Muffins Recipe

Ingredients:

  • 1 1/2 cups rice flour
  • 1 teaspoon cinnamon
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup zucchini, shredded
  • 1 cup nuts (optional)
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients in mixing bowl.
  3. Beat at medium speed scraping bowl, until all blended.
  4. Pour into greased muffin tin or cupcake liners.
  5. Bake for 25 minutes and check muffins.
  6. Bake an additional 10 minutes or until a wooden pick comes out clean.
