We eat salmon (or steelhead trout) a lot in our house and I am always looking for new ways to make it. I had some pesto in the freezer that I needed to use up, so I decided to put it atop my salmon last week. Basil is one of my favorite herbs and I made this pesto last fall before the first freeze. The basil plant I had had grown to be huge and I didn’t want to waste any of its yummy goodness.
The first task at hand was to find a simple pesto recipe. I googled and found this one from Simply Recipes. I did as directed and left out the parmesan cheese when freezing. I did add it back in before baking.
Ingredients
Salmon or choice of fish
Sea salt
Fresh ground pepper
Pesto
1. Preheat oven to 400 degrees.
2. Spray a baking dish with Pam.
3. Season fish with salt & pepper; top with pesto (don’t be shy, add a nice layer)
4. Bake for 12 – 14 minutes* and then broil for 1-2 minutes to finish off.
*Cooking times may vary based on thickness of the fish.
This isn’t the prettiest looking piece of fish, but it was delicious! I can’t to wait more pesto this year. Another recipe I would love to try is pasta with arugula pesto. Arugula is one of my favorite greens and I remember coming across a recipe for arugula last year.
