Review: 1-2-3 Gluten-Free Meredith’s Marvelous Muffins/Quick Bread Mix

Seems like there has been an awful lot of baking going on around here this week.  I had some bananas that needed to be used and a mix that was begging to be reviewed, so I got busy!  1-2-3 Gluten-Free has always been one of my favorites for brownie mixes, but I had yet to try their muffin/quick bread mix.

The mix is free of gluten, dairy, casein, peanut, tree nut, corn, egg and soy!  Pretty sensational, right?  I have had many people ask me recently about corn-free, so I hope that those people are paying attention!  The mix (along with some of their other products) is fortified with iron, calcium and B vitamins.   It is also free of GMOs and certified gluten-free by the GFCO.  There are several ways to prepare this mix, including 2 egg-free variations.  For ideas, make sure to check the recipes page.


The mix took less than 10 minutes to get into the oven.  The only thing that I did differently from the recipe on the back for the banana muffins/bread is add chocolate chips.  The ingredients in the mix are:

Rice flour, Sugar, Tapioca Flour, Potato Starch, Baking Soda, Salt, Aluminum-free Corn-free Baking Powder (Sodium Acid Pyrophosphate, Baking Soda, Potato Starch, Monocalcium Phosphate), Spices, Xanthan Gum.


This mix made an excellent chocolate chip banana bread!  The bread was moist and had a nice chocolate flavor in each bite.  Jon will be eating this for breakfast on-the-go before school.  Even though he may sit down to eat, he is back up within a couple of minutes.  I have never seen a person eat so fast!
