Earth Balance has long been a favorite company of mine. They are located in Boulder, Colorado and focus on using only natural ingredients that are plant-based. Last year I found their coconut spread and fell in love! It quickly became my new favorite topping for English muffins, bagels and the like. This year I discovered another new coconut product: Coconut & Peanut Spread.
There are two varieties of the coconut & peanut spread: creamy & crunchy. I picked up the creamy this go around, but plan on trying the crunchy next.
Creamy coconut & peanut spread – peanuts, organic extra virgin coconut oil, agave syrup, palm fruit oil, natural flavor and salt.
Crunchy coconut & peanut spread – peanuts, organic extra virgin coconut oil, agave syrup, palm fruit oil, natural flavor and salt.
The first thing I did with the coconut & peanut spread was to use it on my morning brown rice cakes with fruit spread. I don’t even know if I can put into words just how spectacular this was! The spread has the exact same consistency as regular peanut butter, but has that wonderful underlying hint of coconut. It was like someone snuck some tropical flavor into my breakfast, now all I need is some pineapple or mango fruit spread to take this to the next level. I can’t wait to use this to make a tropical French toast and stir-fry!

Amazon.com does carry the spread, but it seems to be a little more expensive that way unless you buy 12 at a time.
