Weekends are made for sleeping in, lazy mornings, pancakes and bacon. This past Saturday started out a little busy, but slowed down once we got Jon off to his hockey tournament. Once Hannah woke up she came into the kitchen asking for pancakes. Even though Hannah is not gluten-free, she often eats gluten-free food, as stocking double of everything is not only expensive, but we don’t have enough room in our pantry. I quickly grabbed the box of Maple Grove Farms Pancake and Waffle Mix to make pancakes.
The mix was easy to prepare by adding milk, eggs and oil for pancakes or water, eggs and oil for waffles. The ingredients in the mix are:
Long grain rice flour, soy flour, dextrose, leavening (monocalcium phosphate, sodium bicarbonate), salt, corn starch, natural flavor and xanthan gum.
The pancakes were scrumptious! Hannah asked for chocolate chips, so we made sure to sprinkle them on top as soon as the pancakes came out of the pan to ensure they got all warm and melty before she dug in.
Hannah said, “I love these pancakes!” She went on to ask if she could have the leftovers tomorrow so she didn’t have to share the with Jon!
