When planning our Valentine’s Day meal, I kept in mind the foods that my family likes best & tried to satisfy each person. This can be a rough task, but they all like lasagna and Jon and Hannah both like chocolate cake. I had a box of the Simply Organic Devil’s Food cake mix in my pantry, so I decided it would make the perfect dessert.
The cake was very easy to make. Melt 6 TBSP butter and mix with 3 eggs and water and then pour in the mix. Stir until wet and pour into a baking pan. The cake took roughly 30-35 minutes to bake, just as the box suggested. The ingredients are as follows:
ORGANIC FAIR TRADE CERTIFIED™ CANE SUGAR, ORGANIC BROWN RICE FLOUR, ORGANIC FAIR TRADE CERTIFIED™ COCOA POWDER (PROCESSED WITH ALKALI), BAKING SODA, ORGANIC TAPIOCA STARCH, XANTHAN GUM, SEA SALT.
Hannah was the designated cake froster and couldn’t wait to frost the cake. The directions say to wait until the cake has completely cooled before frosting. It took everything in her being to wait for that cake to cool. Once the cake had properly cooled, she got down to business. After she frosted the cake, I cut it into 9 pieces. The directions suggest baking the cake in an 8” round pan, but I used an 8” square.

The kids scarfed the cake down before I could even cut into my piece! Hannah, my non-gluten-free child, loved it! I thought the cake was good, but there seemed to be this thin layer on top of the cake that was crispy. It was almost like a thin crust formed, like on a crème brulee. The flavor was excellent, though. Next time I want to use this mix to make these Chocolate Crinkle cookies –they look so good!
