Udi’s Gluten-Free Introduces Pumpkin Muffins

A couple of weeks ago I learned that Udi’s Gluten-Free introduced Pumpkin Muffins to their line-up for the holidays.  Since the muffins are new, they weren’t easy to find, but I finally found a package last night at Raisin Rack in Westerville.

I couldn’t wait until morning to try the muffins, so I broke into the package as soon as I got home.  The muffins were moist and full of fall flavor and reminiscent of my favorite pumpkin bread, but without the raisins.  A wonderful addition to the Udi’s muffin line-up!

INGREDIENTS: DRIED CANE SYRUP, EGGS, PUMPKIN, BROWN RICE FLOUR, TAPIOCA STARCH, WATER, PALM OIL, CANOLA OIL, DRY MOLASSES, PUMPKIN SEEDS, SALT, CINNAMON, ORANGE ZEST (ORANGE PEEL, SUGAR AND ORANGE OIL), CARAMEL COLOR, XANTHAN GUM, GROUND GINGER, NUTMEG, BAKING SODA.
CONTAINS EGGS

These are perfect for a quick breakfast before a chilly fall day, or for a snack on a hay ride with the kids.  There are 4 muffins to a package that retails for $6.00 on the Udi’s website, but cost $8.29 at Raisin Rack. 

Along with the muffins, Udi’s also added Ginger Cookies for the holidays.  Both items should be available on the Udi’s website soon or in your local Whole Foods or health food store.
