Jon has really, really missed ice cream sandwiches since going gluten-free in July 2006. He is coming up on 4 years gluten-free. Since then, I have only come across one pre-made gluten-free sandwich that is sold in the store – Julie’s Organic Gluten-free Ice Cream Sandwiches. While these are very good and definitely rank right up there with any gluten-filled ice cream sandwich, they are very $$, even when they are on sale.
Jeni’s Splendid Ice Cream in Columbus, Ohio does make a gluten-free ice cream sandwich that they sell in their ice cream stores. To make this creation, ice cream is sandwiched between 2 macaroons. They are worth their weight in gold.
I think I finally hit the jackpot for a homemade ice cream sandwich treat. These treats are much more cost effective than the Julie’s or Jeni’s and super easy to make. This recipe doesn’t use ice cream, but Cool Whip! Check this out:
Ingredients:
Kinnikinnick S’moreables Graham Crackers
Cool Whip (you can use Lite to save calories)
- Thaw Cool Whip in the refrigerator until spreadable.
- Spread Cool Whip on Graham Crackers.
- Place in freezer for 4-6 hours or overnight.
- Enjoy.
It really is that simple. We ended up getting into them a little early & they were a little squishy in the middle, so we tried them again today. They really do taste like ice cream sandwiches! The Cool Whip firms up to the perfect consistency. I wish I could remember where I saw this idea – wherever it was, it was not gluten-free and then I remembered I had those S’moreables in my pantry & Cool Whip in my freezer & wanted to surprise Jon. They were definitely & hit and already gone! If you really wanted to get creative, you could try the different flavors of Cool Whip – like strawberry or chocolate!
