Review: King Arthur Gluten-Free Chocolate Cake Mix

King Arthur launched their gluten-free flour and mixes a few years back.  The flour and mixes are all delicious and preformed well when I baked with them.  I mentioned trying the chocolate cake in this post and the comments, but never got around to it.

Fast forward a couple of years to a special birthday dinner this past Friday night.  Some friends and I made plans to celebrate my birthday along with one of our other friend’s birthday at a new-to-me local restaurant. While the restaurant does have an extensive gluten-free menu, there are no dessert options.  I thought about going across the street to Jeni’s Splendid Ice Cream, but my dear friend had already thought ahead and made a gluten-free cake!

 

My friend does eat gluten-free, but (she doesn’t have Celiac Disease) she and her family follow the Paleo diet for other health reasons.  Melissa is very well-versed in the gluten-free diet, so I knew we were all in for a very special treat.  She used the King Arthur gluten-free Chocolate Cake Mix and then made a whipped cream cheese frosting from scratch to frost the cake.

INGREDIENTS: SUGAR, MODIFIED TAPIOCA STARCH, RICE FLOUR, COCOA (PROCESSED WITH ALKALI), POTATO STARCH, EMULSIFIER (RICE STARCH, POLYGLYCEROL ESTERS OF FATTY ACIDS, MONO- AND DIGLYCERIDES OF FATTY ACIDS), BAKING POWDER (SODIUM ACID PYROPHOSPHATE, SODIUM BICARBONATE, CORNSTARCH, MONOCALCIUM PHOSPHATE), SALT, XANTHAN GUM.

The gluten-free mix requires the addition of vegetable oil, vanilla, eggs and water.  It makes 2 8-inch or 9-inch rounds, cupcakes or a 9 x 13 inch rectangle cake.IMG_4698

I can’t begin to put into  words how amazing this cake is!  I sample a lot of gluten-free products and mixes and this cake rates up there at the top!  I can’t believe how incredibly moist and flavorful it is!  The cake was shared with many people, most of them don’t have to eat gluten-free and they all raved about it!  I love when I can share how good gluten-free can be!  Normally I don’t do seconds of dinner or desserts, but I did have more of this cake!  I brought home some to share with Jon and he was in heaven, too!

    I LOVE King Arthur’s Chocolate Cake Mix! I actually make it for all of my gluten eating family members birthdays, per their request!
