Review: Great Value Gluten-Free Cookies

Just a little over a week ago I purchased several of the new Walmart brand, Great Value, gluten-free products. We have been working our way through them and today’s review will focus on the cookies. There are three different varieties of gluten-free cookies in the Great Value line-up:

  • Shortbread Cookies
  • Vanilla Sandwich Cookies
  • Cocoa Sandwich Cookies

IMG 2758The sandwich cookies are just like their non-gluten-free counterparts…they taste great, have a wonderful texture, and are great to dip in milk (especially vanilla almond milk!). The Shortbread Cookies are very good, however, 2/3 of the package was crumbled or broken. I am not sure if that was an isolated incident or a problem with that cookie. If it turns out to be an ongoing problem, they would still be good as ice cream toppers or used as a crust for a pie or cheesecake.

All products are certified gluten-free by the National Foundation for Celiac Awareness gluten-free Certification Program. Walmart has locations across the US – check here for the location closest to you.

Review: Red Lobster Gluten-Free

We went on a short road trip yesterday to Cleveland to see my grandmother and have lunch with her. One of my grandmother’s favorite restaurants is Red Lobster, so we picked her up and away we went. Having previously written about the gluten-free at Red Lobster, I knew there would be plenty of options for me to choose from and I was especially excited about dessert.

The gluten-free menu at Red Lobster is updated on a regular basis and has the dates that it’s valid for listed at the top of the page. Frequently updated allergen menus are important as suppliers and ingredients can change. After browsing the menu I finally settled on the Wood-Grilled Salmon with Baked Potato & Green Beans (dry). The dish also came with broccoli.

IMG 2737My salmon was cooked perfectly, as were the vegetables. I hate mushy broccoli, so I was thrilled when it came out perfectly. I thought the grilled lemon was a nice touch. Dessert, NY Style Cheesecake with Strawberries, was on my mind from the time I walked in the door, though I wondered how the cheesecake would be gluten-free with the crust. Turns out there is no crust!

I don’t think I can put into words how wonderful this cheesecake was! It was creamy, rich, dense, and full of flavor and I didn’t miss the crust one bit. Now that I know that this dessert is as phenomenal as it is, I see frequent stops by my local Red Lobster, which happens to be less than 10 minutes from my house. To-go cheesecake, anyone? It is a good thing I am training for a marathon this fall! Red Lobster has locations across the US and has a restaurant locator on the top left of their home page.

Recipe: Gluten-Free and Dairy-Free Blueberry Cheesecake

Although the temperatures here in Columbus, Ohio feel more like late September, it is the middle of July and blueberries are in abundance. Blueberries have always been one of my favorite fruits, so I was thrilled to find this gluten and dairy-free Blueberry Cheesecake recipe in my email the other day.

Crust:

1 1/2 cup fine almond flour

1/2 cup coconut sugar

1/4 teaspoon salt

1/4 cup coconut oil

Filling:

3/4 cup dried blueberries

2 1/2 cups cashews, soaked overnight or at least 2 hours

2 cups unsweetened vanilla coconut milk

2 tablespoons freshly squeezed orange juice

1 tablespoon vanilla extract

Pinch salt

3/4 cup coconut sugar

3 tablespoons psyllium husk

1/4 cup melted cacao butter

Topping:

3 cups wild blueberries

1 teaspoon vanilla

2 teaspoons coconut nectar

2 tablespoons water

1 tablespoon psyllium husk

Directions:

To Make the Crust:

Place almond flour in food processor with sugar and salt. Pulse to mix. Add coconut oil as processor is running and blend until well mixed and meal becomes a little sticky. Press crust over the bottom of an 8” springform pan, cover with plastic wrap and chill for an hour.Remove crust from fridge and sprinkle dried blueberries over crust. Set aside.

To Make the Filling:

Drain cashews, place in blender with coconut milk, orange juice, vanilla, pinch salt and coconut sugar. Blend until smooth and creamy (1 or 2 minutes). Add psyllium husk and cacao butter. Blend until well incorporated.Pour filling over blueberries and crust and refrigerate or freeze for an hour.

To Make the Topping:

Put two cups of the blueberries in blender with vanilla, coconut nectar and water, and blend until smooth. Add psyllium husk and continue blending for a few more seconds. Stir in the remaining 1 cup of berries. Pour over top of cheesecake. Let sit in refrigerator for 1 more hour.

Recipe: Gorgonzola and Sun-Dried Tomato Stuffed Burger

Welcome to July! We are right in the middle of grilling season with the Fourth of July in just a few days. What better way to celebrate than with a juicy burger, right? Colman’s Dry Mustard is the perfect way to spice up your burger.

NewImageGorgonzola & Sun-Dried Tomato Stuffed Burger

  • 3 lbs ground beef
  • 1 cup minced sun-dried tomato
  • 4 oz crumbled Gorgonzola cheese
  • 1/2 cup minced chives
  • 2 T steak sauce (A-1 is gluten-free)
  • 1/3 t. hot sauce
  • 2 t Worcestershire sauce
  • 1 t black pepper
  • 1.5 t salt
  • 2 heaping teaspoons of Colman’s dry mustard
  • 12 gluten-free hamburger buns

Directions:

In a large bowl, mix the ground beef, sun-dried tomatoes, Gorgonzola, chives, steak sauce, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover and refrigerate for two hours. Separate into 12 equal patties. Grill to perfection.

Living in Columbus, Ohio means having access to a plethora of restaurants that offer gluten-free menus. While it used to be that we only had a handful of places where we knew we could dine gluten-free safely, there are so many now that it is often hard to decide. I’ll take that any day over only having a couple to choose from.

As always, when dining out gluten-free, do your due diligence and make sure the staff understands your needs. There are very few restaurants that are 100% gluten-free, so cross-contamination is always a risk. If you don’t feel comfortable with what you are hearing from the staff, perhaps it is best to dine elsewhere.
