HoneyBaked Ham Gluten-Free List

With Christmas & New Year’s Day just days away, fancy meals are being planned and ordered. HoneyBaked Ham is always a great option to serve large amounts of people. Not only does the ham taste fantastic, but it also reheats and freezes well, too!! In addition to the ham, Honeybaked Ham has a number of other gluten-free menu items as well.

Having this list is great if you don’t happen to be a fan of ham or would like to offer another option along with the ham. We love mashed potatoes – they are the perfect accompaniment to any of the protein sources listed above. Add a green salad and dessert and you have a great meal! As with any gluten-free list, always check with the store manager to ensure that nothing has changed and the item is still gluten-free. It is also wise to place an order in advance to reserve your ham or menu item.

Recipe: Cream of Mushroom Pork Chops

Some might say I’m a bit obsessed with the new condensed soups from Pacific Natural Foods. I’ve made several casseroles with the soups and they all turned out deliciously. The green bean casserole I made over the Thanksgiving holiday weekend was the best version I’ve made to date. These soups are simply incredible!

The other night, I wasn’t feeling inspired about making dinner. The only thing I knew was that the meal needed to include pork chops. As usual, I went to food.com for some inspiration. I did a quick search for ‘baked pork chops’. Several recipes popped up so I decided to make a modified version of a couple of different ones. What I ended up with was a simple dish, but one that had a lot of flavor and great taste as well.

Cream of Mushroom Baked Pork Chops

Ingredients:

  • 4 pork chops
  • 1 carton Pacific Natural Foods Cream of Mushroom soup
  • 1 package of Ener-G crackers (crushed)
  • 1 TBS. olive oil
  • ¼ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ t. pepper
  • 1 t. garlic powder
  • ½ C. milk (I used skim)

Directions:

  1. Mix pack of crushed crackers with grated cheese, garlic powder and pepper.
  2. Blend milk and beaten egg.
  3. Dip pork chops in milk/egg mixture and then dredge in cracker/cheese mixture.
  4. Heat olive oil in skillet to medium heat.
  5. Brown chops in skillet on each side, about four minutes per side.
  6. Transfer chops to baking dish (unless your browning pan is oven safe).
  7. Pour carton of soup over chops, covering each one evenly.
  8. Bake in 350 degree oven for approximately 30 minutes (longer for extra thick chops).

I served the moist pork chops with mashed potatoes and green beans. It was an easy weeknight meal that had a bit of a comfort food feel to it. Cream of Mushroom soup is a staple in our neck of the woods so I’m really excited to finally have a gluten-free version readily available. This product is definitely something I’m very grateful for.

To date I’ve used the Cream of Mushroom and Cream of Celery soups multiple times and each and everything I’ve made with them has turned out quite tasty. There is also a Cream of Chicken soup, but so far I’ve not come up with a reason to buy and use it. I never used the gluten version in my gluten eating days either. Keep in mind that these soups offer a little less volume than the Campbell’s version in a can. So far, this hasn’t been an issue in any of the recipes I’ve used the new soups for.

Recipe: Gluten-Free Russian Teacakes

Russian Teacakes, aka Mexican Wedding Cakes or Snowballs, are some of the many cookies my mom used to make when I was a kid. How my mother had time to do all that she did is beyond me, but I thank her all of the time for it.

The original recipe for these cookies comes from the old Betty Crocker cookbook. When I say “old”, I mean the early ’70s. The book is probably close to my age. While my mom still has the book, it is in pieces, which means it was put to good use! I can’t tell you how many awesome recipes are in this book. Many of my childhood favorites are nestled inside this book. My mom was nice enough to make photocopies of my favorite recipes a few years back, so I can reference them any time I like.

I was able to modify this recipe fairy easily. These cookies are very delicate/fragile. I remember them being similar even when they weren’t gluten-free, so I don’t think that has much to do with it.

Ingredients:

  • 1 cup butter, softened
  • 1/2 cup confectioner’s sugar
  • 1 tsp. vanilla
  • 1 egg
  • 2 1/4 cups GF Flour Mix (I used Carol’s Sorghum Mix)
  • 1 1/2 tsps Xanthan Gum
  • 1/4 tsp salt
  • 3/4 cup finely chopped nuts (I used walnuts)

Directions:

Heat oven to 400. Mix thoroughly butter, sugar, egg & vanilla. Work in flour, salt & nuts until the dough holds together. Cover & chill for 30-60 minutes or so. Shape dough into 1-inch balls. Place on ungreased baking sheet lined with parchment paper. Bake for 10 to 12 minutes or until set, but not brown. Let cookies cool slightly – 5-10 minutes. While still warm, roll cookies in powdered sugar. Set on cooling rack to complete cooling. Roll again in sugar once they are cool.

Ready to go into the oven:

These are the perfect cookies to sit back and enjoy with a nice cup of hot cocoa or leave out for Santa Claus with a large glass of milk.

Review: Rhythm Chips

There are so many tasty gluten-free snacks on the market today, we definitely don’t lack from choice. However, many of these snacks are processed and made with refined flours where a good piece of fruit would be the healthier option.  Plain fruit, nuts and vegetables are great, but when a new snack comes out that is naturally gluten-free and made up one of the world’s healthiest vegetables, I have to try it!

The company Daily Juice, based in Austin, TX, was kind enough to send me some samples of their raw all natural Rhythm Chips, which are made out of kale.  Kale is in the same family as cabbage, collard greens and broccoli and is full of health benefits, an excellent source of vitamins and packed with fiber, but kale is not something we usually come across as much as its family members.

Rhythm Chips are raw, vegan, gluten-free, cholesterol-free and GMO-free.  They are available in Bombay Curry, Kool Ranch and Zesty Nacho.  Each flavor uses natural and raw ingredients to create the flavors, and note that some do contain nuts.

I was incredibly surprised with how tasty these were.  I have never really had much kale before or many store-bought raw veggie snacks, so I was a bit skeptical.  Since I love Indian, I tried the Bombay Curry first and when I opened the package and took a look, I must admit, my first thought was of a college party snack that is not quite legal.  Once I got past that, I was really impressed by these chips and the Bombay Curry flavor.  I am not sure it tasted necessarily like curry to me, but the combination of the ingredients (kale, zucchini, carrot, onion, coconut, lemon juice, ginger, vegan nutritional yeast, apple cider vinegar, cilantro, spices and sea salt) made it delicious and definitely my favorite of the threesome.  My second favorite was the Kool Ranch, which was interesting to me, because I am not usually a fan of ranch-flavored items, but these were yummy.  The Zesty Nacho was also incredibly good, and all three make a great snack.  My husband agreed and really liked them all, with the Kool Ranch being his favorite.

We decided these make a great nutritional snack on the go, and a nice change from the standard apple or banana. Plus, a much healthier option than standard corn chips or pretzels (even though those taste good too!)

They come in 2 oz bags, which contain two servings at 101 calories, 2g of fiber and 4g of protein per serving. The chips do break apart pretty easily so be careful not to pack them at the bottom of your bag or purse. Also important to note, each bag contains a desiccant packet to keep the chips fresh and crisp, so be sure not to eat it.

Rhythm Chips can be found at Whole Foods, as well as other speciality and local health food stores, and retail for about $5.99 a bag.  They are also available online on their web site for $29.99 for a 6-pack.

Thai Kitchen Gluten-Free Products

While I try not to keep a lot of processed foods in the house, when I do, I often turn to Thai Kitchen. Not only are their products clearly labeled, but they have a list of all of their allergens online. On nights that I do end up using something from a box, I try to add my own fresh vegetables and a salad to round out the meal. Salads & vegetables are easy to prepare. To simplify meal time even more, I have my veggies already cleaned & ready to go in the refrigerator.

Beyond the flavors and health benefits, Thai cuisine is made even more enticing by the elaborate art of food presentation known as Palace Cuisine. This ancient skill, still practiced today, is a beautiful demonstration of the convergence of Thai cuisine and culture. Used in moderation, these products can be a lifesaver on busy weeknights.
