Recipe: Gluten-Free Ham and Cheese Crepes

These delicious crepes are a favorite in our house. We eat them filled with scrambled eggs, ham, and cheese, but you can fill them with anything. If you are feeling especially creative, try adding different herbs and seasonings to the crepe mix for a different flavor.

Gluten-Free Ham and Cheese Crepes Recipe

Ingredients:

  • 8-10 eggs
  • 3 ounces of Ham lunch meat
  • 1/2 tablespoon butter
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup cornstarch
  • 1/3 cup cornmeal
  • Salt & Pepper
  • Shredded Cheese (we use cheddar but you can use whatever you prefer)

Directions:

  1. Place a large skillet over medium heat and add butter
  2. While the butter is melting, cut the ham into bite-size pieces.  A pizza cutter works great for this.
  3. Once butter is melted add ham to the pan and give a quick stir.  Let cook for 2-3 minutes.
  4. Crack 8-10 eggs in a bowl and whisk.
  5. Add eggs to skillet and sprinkle with a dash of salt and pepper and stir.
  6. In another bowl crack 2 eggs.
  7. Add milk and a pinch of salt and whisk.
  8. Add cornstarch and whisk until cornstarch is dissolved.
  9. Stir the egg and ham mixture and continue stirring every couple of minutes until the eggs are cooked completely.
  10. Preheat a 9-inch, nonstick skillet over medium heat.
  11. Whisk the crepe mixture again to ensure that all the lumps of cornstarch are gone.
  12. Add cornmeal to the crepe mixture and whisk.
  13. When the 9-inch skillet is warm, whisk the crepe mixture and then pour a thin layer over the bottom of the skillet.  Crepes should be fairly thin.
  14. Allow the crepe to cook until the side that is facing up is cooked through and then flip.
  15. Cook for about 1 more minute then remove to a plate.
  16. Whisk the crepe mixture before pouring out additional crepes and cook the same way.
  17. To assemble, place the crepe on a plate and spoon the ham and egg mixture, while still warm, to one side of the crepe. Sprinkle with shredded cheese and then roll up and enjoy!!

Makes approximately 4 crepes.

Gluten-Free Chicken with Vegetables Recipe

Ingredients:

  • 1/2 chicken breast
  • 1 tomato
  • 1 small potato
  • 1 slice carrot
  • 1 slice onion
  • 4 broccoli spears

Directions:

  1. Place the chicken, onion, carrot, and tomato into a saucepan.
  2. Cover with water and bring to a boil.
  3. Turn the heat down and simmer for around 45 minutes until the chicken is tender.
  4. Meanwhile, cut the potato in half and place it in a steamer, along with the broccoli, over a pan of boiling water.
  5. Steam for around 20 minutes.
  6. When the chicken is cooked, strain, reserving the stock. Skin the potato and add, the broccoli to the other ingredients.
  7. For young babies place in a liquidizer and blend until smooth.
  8. Add some of the stock to moisten if necessary.
  9. For older babies, you can puree the chicken, but just mash the vegetables, leaving some texture for the baby to explore.
  10. Cool and serve.

Infant Recipe: Basic Baby Food

When dealing with Celiac Disease the best way to ensure the foods you eat are gluten-free is to make them yourself. This includes food for your youngest with Celiac as well. All that is required to quickly and easily prepare your baby’s meals is a blender or food processor for pureeing chopped foods.

This is not a specific recipe, rather it is a method for making basic baby food. For the youngest eater, you can make smooth, easy-to-swallow baby food. And as your child grows, you can change the consistency relatively easily. When starting your baby on solid foods remember to always introduce one food at a time, spacing a few days in between each new food. Doing this gives you the ability to take note of any adverse reactions to certain foods.

Making Homemade Baby Food

Ingredients:

  • Water, breast milk or prepared formula

Fruits:

  • Apples
  • Pears
  • Bananas
  • Papayas

Vegetables:

  • Carrots
  • Potatoes
  • Butternut squash
  • Sweet potatoes
  • Pumpkin
  • Rutabaga
  • Parsnips

Optional:

  • Rice Cereal

Directions:

  1. Choose your ingredient(s). Remember to start off using one at a time, but as your child successfully tries each ingredient you can mix and match (i.e. apple & banana or carrots & pumpkin) for new flavors.
  2. Cut your ingredient(s) into small, bite-size pieces. They will cook faster and be easier to puree.
  3. Cook your ingredient(s) by either steaming or baking until they are soft.
  4. Ripened bananas and papayas don’t require cooking, just peel and mash if using them.
  5. Once your ingredient(s) are soft, use a blender or food processor to puree them while adding water, breast milk, or formula.
  6. The consistency of the puree will depend on where your child is at regarding eating. Infants just starting out will need a thinner consistency whereas more seasoned eaters can have it thicker. Also, if you plan on adding rice cereal you will want the consistency thinner as the cereal will thicken it up.
  7. Once your food is pureed to the consistency you want, you can stir in some rice cereal if you choose to do so.

Infant Recipe: Advanced Baby Food

Once your baby has mastered eating the Basic Baby Food Recipe, you can begin to add meats and new fruits and vegetables. As with the basic recipe, you will want to make sure you try any new ingredients one at a time leaving a few days in between to watch for any adverse reaction to the new food. Now that your baby is older, the food should be thicker, and as he develops teeth, chunkier so he can work on learning to chew. Again, mix and match, especially when introducing meats as many youngsters have a hard time adjusting to the taste of meat. For an added treat, you can also add cooked rice once you feel your baby can handle it.

Ingredients:

Meat:

  • Chicken
  • Beef
  • Ham
  • Turkey

Fruits:

  • Peach
  • Cranberry
  • Blueberry
  • Cantaloupe

Vegetables:

  • Broccoli
  • Peas

Optional:

  • Cooked Rice

Directions:

  1. Choose your ingredient(s). Remember to start off using one at a time, but as your child successfully tries each ingredient you can mix and match (i.e. apple & banana or carrots & pumpkin) for new flavors.
  2. Cut your ingredient(s) into small, bite-size pieces. They will cook faster and be easier to puree.
  3. Cook your ingredient(s) by either steaming, baking, or for meat, broiling, or poaching until they are soft.
  4. Once your ingredient(s) are soft, use a blender or food processor to puree them while adding water, breast milk or formula.
  5. The consistency of the puree should be somewhat thick.
  6. Once your food is pureed to the consistency you want, you can stir in some cooked rice if you choose to do so.
