Recipe: Gluten-Free Mozzarella Caprese Bites

Last night I hosted a Thirty-One party for some friends and spent a lot of time looking for some different appetizers and finger foods to serve. I made some tried-and-true favorites like Buffalo Chicken Dip, but thought it would be fun to try some new recipes, too.

I found a couple recipes on Pinterest that I decided to try – one turned out fabulous, the other?  Not so much.  I’ll spare you those details and share the hit of the party: Mozzarella Caprese Bites.

This recipe was simple and so delicious!  Truly a wonderful blend of flavors!

IMG_3506Mozzarella Caprese Bites

  • Basil leaves
  • Bel Gioioso Fresh Mozzarella
  • Organic grape tomatoes
  • Nakano Balsamic Blend Seasoned Rice Vinegar
  • Extra Virgin Olive Oil
  • Toothpicks

Directions:

  1. Wash basil and grape tomatoes.
  2. Cut fresh mozzarella into bite size pieces.
  3. Assemble the first 3 ingredients on toothpicks.
  4. Chill until ready to serve.
  5. Drizzle with Nakano Balsamic Blend and extra virgin olive oil.

Enjoy!

IMG_3512Nakano has several varieties of gluten-free rice vinegars (see picture).  All varieties are low in calorie and have no fat or preservatives.  These help put a great finishing touch to salads, pizza, veggies, etc.  I was very pleased with the flavor the Balsamic Blend added to the Mozzarella Caprese Bites.

Recipe: Rustic Gluten-Free Pumpkin Walnut Pizza

A month or so ago I had the pleasure of sampling a wonderful pasta sauce from Cucina Antica – the Tuscany Pumpkin Sauce.  I have used this sauce in many ways now and would love to share some of my recipe ideas with you.  Today I will share my Rustic Pumpkin Walnut Pizza.  I love pizza on Friday nights and after my first taste of this sauce, I couldn’t resist using it on a pizza.

This has to be one of my best creations to date!

IMG_3319Rustic Pumpkin Walnut Pizza

  • 1 Udi’s gluten-free pizza crust
  • 1/2 cup Tuscany Pumpkin sauce
  • 1/4 feta cheese
  • Sprinkle of mozzarella cheese
  • Handful of raw spinach or arugula
  • 1-2 TBSP chopped walnuts

1.  Preheat oven to 375 degrees.

2.  Top pizza with toppings in the order they are listed.

3.  Bake for 8-10 minutes or until cheese is melted.

4.  Enjoy!

Serves 1-2 people

Recipe: Chocolate Chip Sandwich Cookies

My kids love to make sandwich cookies out of the cookies that I bake. It doesn’t matter what type of cookie it is, they want to spread frosting on the bottom and sandwich another cookie onto it. Ideally, I would love to see an Oatmeal Cream Pie version of this, but since my kids aren’t fans of oatmeal cookies, I doubt this will happen anytime soon.  In the meantime, they experiment with the ones they love.

Jon’s latest creation was a Chocolate Chip Cookie Sandwich with Cream Cheese Frosting in the middle.

Hannah chose to use Milk Chocolate Frosting for her filling.  Would it kill them to use the same frosting to avoid having two different frostings opened at once?

This recipe is simple as I used a box of the Betty Crocker gluten-free Chocolate Chip cookie mix.  The mix calls for softened butter, vanilla and an egg and can be mixed and baked in approximately 30 minutes (once the oven is pre-heated).  Both the mix and the frostings can be purchased in most grocery stores across the US.

Recipe: Gluten-Free Turkey Avocado Sliders

I have been wanting to use these cute little ciabatta rolls from Schar for a while now but hadn’t really come up with a good use for them until last night. Sure, they are great for garlic bread or even toasted bread dipped in herbed olive oil, but I wanted to be a little more creative. When I went to make a turkey burger and found I was out of hamburger buns, it suddenly came to me to use the Schar ciabatta parbaked rolls.

The ciabatta rolls are not only free of gluten, but they are also free of milk, eggs and preservatives.  The ingredients are:

water, corn starch, corn flour, psyllium seed husk powder (vegetable fiber), yeast, rice flour, dextrose, soy protein isolate, palm oil, hydroxypropylmethylcellulose, salt, tartaric acid, citric acid.
CONTAINS SOY.

Each roll contains 100 calories, 1 gram fat, 2 grams protein, 4 grams fiber.  The rolls ended up being the perfect for sliders (small hamburgers).  I simply cut my turkey burger in half and placed each half on a roll.  This was one of the best meals I have had in a long time!

Turkey Avocado Sliders

serves 1 – can easily be multiplied to make more

  • 2 Schar ciabatta parbaked rolls
  • 1 burger patty (I used turkey, but beef, bison or veggie would just fine)
  • 1/4 large Hass avocado
  • Mixed greens
  • Spicy brown mustard

1.  Slice rolls and place in the toaster oven for 5 – 10 minutes or desired doneness.

2.  Cook the burger according to your liking.  If cooking turkey, make sure that it is cooked through.

3.  Slice avocado.

4.  Assemble sliders and enjoy!

Recipe: Gluten-Free Meatball Sub With A Twist

I had some trouble with meal planning last week. I am not sure what happened, but a couple of the meals I had on the plan were great ideas, but I ended up not having the ingredients to make them. I should not menu plan when I am tired or drinking wine. On one meal I even got so far as browning the ground turkey for our Mexican pizzas only to realize that I had no taco seasoning.  Yes, I know that I could have made my own, but my son doesn’t accept change well and I knew he would most likely not eat the meal if I changed the seasoning up. I opted for plan B – add marinara sauce and have an Italian meal.

I had some Schar par-baked sub rolls in my pantry, so I figured that would be a hit with my son. Normally one would put meatballs on a sub roll, but I had already browned the ground turkey, so I improvised. The meat sauce was very thick, so it made the perfect filling, almost like a Sloppy Joe filling, for the roll.

Looking back, I am not sure why I haven’t done this in the past. The meal was fast to make, tasted good, and was a hit with the kids.  It was definitely a win all the way around!  The best thing about using ground meat in place of meatballs is that it allows the sandwich to keep its shape without splitting open!  You still get all of the flavors of the meatball sub without the broken roll and upset child (or adult like me).

IMG_1244Gluten-Free Meatball Sub with a Twist

  • 1 lb ground turkey, bison or beef, browned
  • 1 jar Prego three cheese marinara
  • Schar par-baked sub rolls  (they come 2 to a package, but are individually wrapped)
  • Mozzarella cheese

1.  Bake par-baked roll according to package directions.

2.  Fill with meat sauce and tope with mozzarella.

3.  Broil until cheese is melted – not too long!

4.  Enjoy.

I love keeping leftover meat sauce in the refrigerator to make more sandwiches, pasta, etc.  It will keep for a few days, so no worries if you don’t go through it all the first night.  It will even freeze well, so consider making single-serve portions if you live alone.
