I have been searching for restaurants with gluten free menus and have been very annoyed at the disclaimers for both gluten and other food allergies. Do those establishments with disclaimers about “cross contamination” and “suppliers ingredients changing” feel that this makes potential customers feel secure? How do they think a disclaimer about, say, e-coli would affect business?

It’s more about protecting their business. Any company that has gluten in their business MUST let the customer know. It sucks, but nuts, eggs, soy, dairy and now gluten must be labeled.
Though we make our gluten free dough in a seperate area, on seperate pans, using sepertate utensils… we still have to put a warning on our menu… because we have gluten dough. We have never gotten a complaint from someone being sick… but we still have to inform our customers because this is a pizza place (flour is in the air)

I am not sure why you only have national and fast food places only? Many People who eat GF are afraid of chains typically the mom and pops are better and better and making sure the order is correct so please consider changing the requirement because Ozona Pizza has not only 3 sizes of Gluten-Free Pizza hand made, they have Gluten-Free Dinners, Desserts, Garlic Knots, Appetizers, Gluten-Free Beers and Ciders, Gluten-Free Ice Cream and Cones
They also have Gluten-Free Dairy-Free Vegan Ice Cream, Pizzas, Garlic Knots and Dinners
Their Gluten-Free pizza is also Soy Free as well
