Recipe: Gluten-Free Chocolate Peanut Butter Cookies

When it comes to gluten-free cookies, there is a load of gluten-free recipes available around the internet. As a result, we’ve had to try to be a little pickier with the recipes we publish here to make sure only the best make the cut!

Gluten-Free Chocolate Peanut Butter Cookies Recipe

Cookie Ingredients:

  • 1 1/4 cup GF flour blend
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 1/4 cup butter
  • 1/2 cup sugar, extra for rolling
  • 1/2 cup brown sugar
  • 1/3 cup peanut butter
  • 1 large egg
  • 1 tsp vanilla

Cookie Directions:

  1. Preheat oven to 350 degrees, and grease the baking sheet.
  2. In a medium bowl cream together the butter and both sugars.
  3. Mix in the egg and vanilla; mix well.
  4. Mix in the peanut butter, cocoa powder, salt, and baking soda.
  5. Lastly, add the flour.
  6. Roll the dough into small balls, about 1 inch in diameter, and roll in extra sugar.
  7. Lightly press down each cookie to flatten slightly.
  8. Bake for 8-10 minutes.

Ahhh, gluten-free pizza recipes. Who doesn’t love pizza? Finding a good gluten-free pizza crust isn’t all that difficult, giving someone with celiac disease easy access to simple pizzas. But what about a specialty pie like a taco pizza? If you are someone that really wants a gluten-free taco pizza recipe, give this gluten-free recipe a try and let us know how it turns out.

Gluten-Free Taco Pizza Recipe

Pizza Ingredients:

  • 1 pkg Tastefully gluten-free Pizza Crust Mix
  • 1 tsp Sugar
  • 2 Eggs, lightly beaten
  • 1/4 cup Olive Oil
  • 1/4 tsp Oregano (optional)
  • 1/2 tsp Basil (optional)

Pizza Topping Ingredients:

  • 1 jar gluten-free Taco Sauce
  • 1 lb. Cooked Ground Beef
  • 2 cups Coarsely Crushed Tortilla Chips
  • 2 cups Shredded Cheddar Cheese
  • Shredded Lettuce
  • Diced Tomatoes

Pizza Directions:

  1. Prepare gluten-free pizza crust of your choice using package directions
  2. Spread evenly into 2 12-inch pizza pans.
  3. Spread your favorite gluten-free taco sauce evenly over the dough.
  4. Spread ground beef, crushed tortilla chips, cheddar cheese evenly over dough.
  5. Bake as directed.
  6. Cut and sprinkle with shredded lettuce and tomatoes.

Angel food cake is one of those desserts that reminds me of my childhood. For most people following a strict gluten-free diet, angel food cake is not an option, but it can be with the right gluten-free recipe.

Gluten-Free Angel Food Cake Recipe

Cake Ingredients:

  • 1 cup gluten-free flour
  • 1 tsp Xanthan Gum
  • 12 egg whites, room temperature (to maximize the volume of egg whites)
  • 1 1/2 tsp. cream of tartar
  • 1/4 tsp salt
  • 1TBSP vanilla
  • 1 1/2 cups granulated sugar

Cake Directions:

  1. Preheat oven to 325 degrees.
  2. Separate egg whites in a stainless steel bowl and let them come to room temperature.
  3. In a separate medium bowl, sift gluten-free flour, salt, xanthan gum, and 3/4 cup of sugar.
  4. Beat the egg whites until foamy.
  5. Add the cream of tartar.
  6. Beat until the egg whites form soft peaks.
  7. Beat in the other reserved 3/4 cup of sugar about 3 TBSP at a time. Beat until stiff peaks form.
  8. Slowly fold in the flour mixture about 1/4 cup at a time. Once the flour mixture is combined, fold in the vanilla.
  9. Slowly pour the batter into a tube pan (bundt cake pan or similar) and spread the batter evenly. Run a knife through the cake to eliminate any air bubbles.
  10. Bake for 50-55 minutes until the top is golden and the sides begin to pull away.
  11. Cool for 10 minutes.

Recipe: Gluten-Free Eggplant Parmesan

Gluten-Free Eggplant Parmesan Recipe

Ingredients:

  • 1 large eggplant
  • 2 Tbs. salt
  • 1/2 c. gluten-free all purpose flour
  • 1 tsp. onion powder
  • 1 tsp. garlic salt
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. ground sage
  • 2 eggs
  • 2 Tbs. milk
  • 1 c. gluten-free corn-flake crumbs
  • 1/4 c. Parmesan cheese
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • Prepared spaghetti sauce
  • Grated mozzarella cheese
  • Vegetable or olive oil (for cooking)

Preparation:

  1. Slice eggplant into 1/2 inch slices.
  2. Sprinkle salt on both sides of cut eggplant and place in colander in sink or over large bowl.
  3. Allow eggplant to sit (to sweat moisture) for 30-45 minutes.
  4. While eggplant is sitting, combine flour, onion powder, garlic salt, black pepper and sage to make the flour mixture.
  5. Beat egg with milk to create the egg dip.
  6. Combine corn-flake crumbs, parmesan cheese, oregano and basil to make breading mixture.
  7. Rinse and dry eggplant slices.
  8. One at a time, coat each eggplant slice in flour. Gently shake off excess.
  9. Dip flour coated eggplant in egg dip. Cover completely.
  10. Transfer eggplant slice to breading mixture and coat fully.
  11. Repeat steps 8-10 until all slices are breaded.
  12. Cook immediately, or freeze for long term storage.

Cooking Directions:

  1. Preheat oven to 350 degrees.
  2. Heat oil to 350-400 degrees in pan or deep fryer.
  3. Fry gluten-free Eggplant Parmesan slices for 1-3 minutes in oil until golden brown. Do Not Over-brown.
  4. Drain on paper towels and transfer to baking sheet.
  5. Top each slice of gluten-free Eggplant Parmesan with desired amount of spaghetti sauce and mozzarella cheese.
  6. Bake in 350 degree oven for 10-15 minutes, until cheese is melted and slightly brown on top.
  7. Serve immediately for best results.

Freezing Instructions:

  1. gluten-free Eggplant Parmesan can be made in advance and stored in the freezer for up to two months.
  2. Freeze gluten-free Eggplant Parmesan by placing a single layer on a baking sheet lined with waxed paper directly after breading.
  3. Place baking sheet in the freezer and freeze four hours to overnight.
  4. When gluten-free Eggplant Parmesan is frozen, transfer to a freezer safe container for storage.
  5. Cooking instructions are the same for both fresh and frozen gluten-free Eggplant Parmesan.

Recipe: Gluten-Free Twinkies

Some would argue that twinkies are one of the most disgusting foods ever intented, but as popular as they are, I’m sure some of our readers would like to make their own twinkie. For people who suffer from Celiac Disease, twinkies are not an option, unless of course you make them homemade. Here is a gluten-free recipe for twinkies that people on a gluten-free diet can try at home.

Gluten-Free Twinkies Recipe

Twinkie Ingredients:

  • 3 eggs, separated
  • ¼ cup grapeseed oil
  • ¼ cup agave nectar
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 6 tablespoons coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon celtic sea salt

Twinkie Directions:

  • In a large bowl, whip egg whites to stiff peaks, then set aside
  • In a medium bowl, whip egg yolks until pale yellow, then whip in grapeseed oil and agave
  • Whip vanilla and lemon juice into egg yolk  mixture
  • In a medium bowl combine coconut flour, baking soda and salt
  • Blend flour mixture into egg yolk mixture, then whip ingredients together until smooth
  • Gently fold egg whites into yolk-flour mixture
  • Spoon batter into Twinkie molds until they are half full (you will get 8 twinkies)
  • Bake at 350° for 11-12 minutes
  • Remove from oven and allow Twinkies to cool

Twinkie Filling Ingredients:

  • 2 egg whites
  • ¼ cup agave nectar

Twinkie Filling Directions:

  • Whip egg whites to stiff peaks
  • Blend in agave and re-whip until stiff peaks form again
  • Place filling in Twinkie filling injector
  • Place cooled Twinkie flat side up and inject filling into Twinkie in 3 spots on its flat (bottom) side
