Recipe: Gluten-Free Blueberry Pancakes

There are a number of great gluten-free pancake recipes out there, but here is one that I think is pretty special. Try it for yourself and let us know your thoughts in the comments below!

Gluten-Free Blueberry Pancakes Recipe

Ingredients:

  • 1 cup gluten-free flour mix (see below)
  • 1 tablespoon flaxseed meal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil (I used safflower)
  • 1/2 teaspoon vanilla
  • 1 cup plain Soy Milk
  • 1 teaspoon lemon juice
  • 1 cup blueberries
  • 1 egg

Directions:

  1. Mix the flour mixture, flaxseed meal, baking powder, baking soda, sugar, and salt together in a medium-sized bowl.
  2. Add the oil, egg, vanilla, soymilk, and lemon juice and mix until just blended.
  3. Add the blueberries and blend to mix them into the batter.
  4. Drop 2 tablespoons of batter per pancake (or more if you like them bigger) onto the griddle. When the top of the pancake looks almost completely dry, flip the pancake and cook until the other side is finished.
  5. Top with maple syrup.

Want to make this recipe Vegan friendly? Just eliminate the egg!

Recipe: Gluten-Free Flour Mix

There are many gluten-free flours available in stores; however, I often find I prefer homemade flour. For anyone interested, here is how to make your own homemade gluten-free flour at home. You can keep this mix on hand and use it in place of white wheat flour in your favorite recipes.

Gluten-Free Flour Mix Recipe

Ingredients:

  • 2 cups white rice flour
  • 1/3 cup tapioca flour
  • 2/3 cup potato starch flour (not plain potato flour)

Directions:

  1. Combine all the ingredients in a large bowl and mix thoroughly.
  2. Sift the mixture into a large airtight container.
  3. Store in a container tightly closed.

This recipe yields 3 cups, but you can easily increase it if you need more.

Recipe: Gluten-Free Chocolate Thousand Layer Cake

Having trouble finding a good gluten-free dessert to enjoy? Unlikely of course, but here is a gluten-free recipe that I recommend everyone check out. It is a chocolate thousand-layer cake that is gluten-free. Give it a try and let us know how it works out.

Gluten-Free Chocolate Thousand Layer Cake Recipe

Cake Ingredients:

  • 1/3 cup butter, softened
  • 1 heaped tbsp leatherwood honey
  • 1 tbsp golden caster sugar
  • 5 large eggs, separated
  • Pinch of salt
  • ¼ cup potato starch
  • ¼ cup rice flour
  • 1 tsp baking powder
  • 1 tsp matcha powder, mixed with 1 tbsp water to form a paste
  • 1 tsp cocoa powder, mixed with 1 tbsp water to form a paste

Matcha Butter Icing Ingredients:

  • ½ cup icing sugar
  • 1 ½ tbsp margarine or unsalted butter
  • ½ tsp matcha

Cake Directions:

  1. Cream the butter and sugar together. Beat in the egg yolks.
  2. In a clean bowl, beat the egg whites with the salt until stiff. Fold into the yolk mixture, then fold in the flour & baking powder.
  3. Divide the batter between two bowls.
  4. Add the matcha paste to one bowl and the cocoa paste to the other.  Stir well.
  5. Line the bottom of a buttered 9” round cake tin with baking paper & grease.
  6. Pour about ¼ cup of the chocolate batter into the tin, spreading to form a thin layer.
  7. Place the tin in a steamer & steam for about 5-8mins, or until the layer is firm.
  8. Spread ¼ cup of the matcha patter over this, tilting the pan to ensure even coverage. Steam until firm.
  9. Repeat layering and steaming until all batter is used.
  10. When you are finished with the last layer, steam the whole cake for another 30-40 minutes.
  11. Let the cake cool, then remove it from the tin.
  12. Meanwhile, make the butter icing by combining all the ingredients together.
  13. When the cake has completely cooled, slice it in two & spread butter icing on one half.
  14. Place the remaining half on top, and dust with cocoa powder & icing sugar.

Gluten-Free Ground Rice with Apples Recipe

Ingredients:

  • 1 small eating apple
  • 2 tablespoons ground rice
  • 4 fl oz (110ml) milk or milk substitute
  • 1 tsp reduced sugar jam

Directions:

  1. You can use a microwave to prepare this meal, but allow time for cooling as you could burn your baby’s mouth if you feed it to him too soon.
  2. Core, peel, and slice the apple.
  3. Place it in a small bowl and microwave on high power until soft.
  4. Mash with a fork or pop in the food mill or processor.
  5. Meanwhile, place the ground rice and half the milk into another bowl and mix to form a paste.
  6. Add the remaining milk and microwave on high power for around 4 minutes.
  7. Mix the apple pulp and jam into the rice, cool then serve.

Gluten-Free Coconut Raisin Pudding Recipe

Ingredients:

  • 1 small apple
  • 1 oz raisins
  • 4 tbsp unsweetened apple or orange juice
  • 1/2 oz desiccated coconut

Directions:

  1. Peel, core, and slice the apple.
  2. Put into a small saucepan with the juice and raisins and cook on a low ring for around 10 minutes or until the apple is soft.
  3. Take off the heat and stir in the coconut.
  4. Liquidise, cool, and serve.
